Tamari (Japanese Gluten-Free Soy Sauce)
Tamari is a rich, mellow Japanese soy sauce that originated as the liquid runoff from fermenting miso. Unlike standard soy sauce, it's brewed with little or no wheat, giving it a smoother, less sharp flavour and making it a popular naturally gluten-free alternative (always worth checking the label, as formulations vary). It's used just like regular soy sauce — for dipping, marinating, glazing and seasoning.

Tamari is a concentrated, salty seasoning. Per tablespoon, it contains approximately 11 calories, virtually no fat, 1 gram of carbohydrates and around 2 grams of protein. It is very high in sodium, typically around 1,000 milligrams per tablespoon.
