Prawns in Lobster Sauce

Despite the name, there's no lobster in lobster sauce. It's the light, garlicky sauce that Cantonese cooks traditionally served with lobster, and on Western takeaway menus it became a prawn dish in its own right.

The sauce is built from the pantry: chicken stock, soy sauce, Shaoxing wine and a few fermented black beans, thickened with cornflour and finished with ribbons of egg.

It's mild, comforting and very quick. Serve it over steamed rice so none of the sauce goes to waste.

Ingredients

  • 500g raw prawns, peeled and deveined
  • 1 tsp cornflour, for the prawns
  • 1 tbsp neutral oil
  • 4 garlic cloves, finely chopped
  • 1 tbsp fermented black beans, rinsed and lightly mashed (optional)
  • 100g pork mince (optional, traditional)
  • 1 tbsp Shaoxing wine
  • 1 cup (250ml) chicken stock
  • 1 tbsp light soy sauce
  • 1/2 tsp sugar
  • 1/2 cup frozen peas
  • 1 tbsp cornflour mixed with 2 tbsp water
  • 2 eggs, lightly beaten
  • 1/4 tsp white pepper
  • 2 spring onions, sliced
  • Steamed jasmine rice, to serve

Instructions

  1. Toss the prawns with 1 tsp cornflour.
  2. Heat the oil in a wok over medium-high heat. Add the garlic, black beans and pork mince, if using, and stir-fry for 2 minutes until the pork is cooked.
  3. Add the prawns and cook for 1 minute, then add the Shaoxing wine, stock, soy sauce, sugar and peas. Bring to a simmer.
  4. Stir the cornflour slurry and pour it in, stirring until the sauce thickens, about 1 minute. The prawns should be just pink.
  5. Turn off the heat. Slowly drizzle in the egg in a thin stream while gently stirring once or twice, so it sets into soft ribbons.
  6. Season with white pepper, scatter with spring onion and serve over rice.
