Miso Glazed Salmon

Miso glazed salmon is the dish that made miso famous on restaurant menus around the world. The glaze caramelises under the grill into sticky, slightly charred edges while the fish stays soft inside.

It takes four pantry staples: white miso, mirin, sake and a little sugar, with a touch of soy. Restaurants marinate overnight, but even 10 minutes gives great flavour.

Serve with steamed rice and something green like bok choy or blanched broccolini.

Ingredients

  • 4 salmon fillets (about 180g each), skin on
  • 3 tbsp white (shiro) miso
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp sugar
  • 1 tsp soy sauce
  • 1 tsp neutral oil
  • 1 spring onion, thinly sliced
  • Toasted sesame seeds, to serve
  • Steamed rice, to serve

Instructions

  1. Mix the miso, mirin, sake, sugar and soy sauce into a smooth paste.
  2. Pat the salmon dry and spread the glaze over the top and sides. Leave for 10 minutes (or up to a day in the fridge).
  3. Heat the grill to high and line a tray with foil. Brush the foil with the oil and lay the salmon on it, skin side down.
  4. Grill for 6-8 minutes, 10-15cm from the heat, until the glaze is caramelised and charred in spots and the salmon is just cooked. Cover loosely with foil if it darkens too fast.
  5. Scatter with spring onion and sesame seeds and serve with rice.
