Khai Jiao (Thai Omelette Rice)

Khai jiao (ไข่เจียว) is Thailand's ultimate comfort food: eggs whisked with fish sauce, then poured into very hot oil so they puff up into a golden, lacy omelette with crunchy edges and a soft centre.

It's eaten over jasmine rice with a squeeze of Thai sriracha sauce or a little prik nam pla, and it's what Thai people cook when there's nothing else in the fridge.

The secrets are lots of hot oil, a good whisk to get air in, and a splash of lime juice or a little rice flour for extra puff.

Ingredients

  • 3 eggs
  • 2 tsp fish sauce
  • 1 tsp lime juice
  • 1 tsp rice flour or cornflour (optional, for extra puff)
  • 1/3 cup (80ml) neutral oil
  • 1 spring onion, thinly sliced
  • 1 1/2 cups steamed jasmine rice
  • Sriracha sauce, coriander and cucumber slices, to serve

Instructions

  1. Whisk the eggs, fish sauce, lime juice and rice flour with a fork or chopsticks for 30 seconds until frothy. Stir in half the spring onion.
  2. Heat the oil in a wok or small frying pan over high heat until shimmering and just starting to smoke.
  3. Pour the eggs into the centre of the oil from a little height. They'll puff up straight away.
  4. Cook for 1 minute until the edges are golden and crisp, then flip carefully with a spatula and cook for 30-60 seconds more.
  5. Lift out, drain briefly and slide onto a mound of rice. Top with the remaining spring onion and coriander and serve with sriracha and cucumber.
