20-Minute Crispy Rice Paper Dumplings

Rice paper dumplings went viral for a reason: no dough, no folding skills, and the outside fries up crisp and blistered with a chewy, mochi-like centre.

The filling is a quick mix of pork mince, mushrooms and spring onion seasoned with soy sauce, oyster sauce and sesame oil. Double the rice paper for each dumpling so it holds together in the pan.

Serve with a quick dipping sauce of soy sauce, black vinegar and chilli crisp.

Ingredients

  • 250g pork mince
  • 4 shiitake or button mushrooms, finely chopped
  • 2 spring onions, finely chopped
  • 1 garlic clove, finely grated
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 16 rice paper sheets (22cm)
  • 2 tbsp neutral oil
  • 2 tbsp soy sauce, 1 tbsp black vinegar and 1 tsp chilli crisp, for dipping

Instructions

  1. Mix the pork, mushrooms, spring onion, garlic, soy sauce, oyster sauce and sesame oil in a bowl.
  2. Dip one rice paper sheet in warm water for 2-3 seconds, lay it on a clean board, then dip a second sheet and lay it on top.
  3. Spoon a heaped tablespoon of filling into the centre, fold in the sides and roll up into a square parcel. Repeat to make 8 dumplings.
  4. Heat the oil in a non-stick frying pan over medium heat. Add the dumplings seam-side down, not touching, and cook for 4 minutes each side until golden, crisp and cooked through.
  5. Mix the dipping sauce ingredients and serve with the hot dumplings.
