Gai Pad Nam Man Hoi (Thai Oyster Sauce Chicken)

Gai pad nam man hoi (ไก่ผัดน้ำมันหอย) is a Thai made-to-order (ahan tam sang) classic: chicken stir-fried with oyster sauce, garlic and vegetables and served over rice, often with a crispy fried egg.

It's savoury rather than spicy, built on oyster sauce, a little light soy and fish sauce, and a pinch of sugar. That makes it a great one for kids or anyone who doesn't love chilli.

Add sliced bird's eye chilli or a spoon of prik nam pla on the side if you want heat.
