Gochujang Chicken Rice Bowl

This is the Korean-inspired rice bowl you'll find on fast-casual menus everywhere: chicken thighs with a glossy red glaze that's sweet, spicy and savoury all at once.

The glaze is pure pantry: gochujang, soy sauce, honey, rice vinegar and garlic. Cook the chicken first, then let the sauce bubble down around it until sticky.

Serve over rice with quick pickled cucumber, kimchi or a fried egg.

Ingredients

  • 700g chicken thigh fillets
  • 1 tbsp neutral oil
  • Glaze: 3 tbsp gochujang, 2 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 1 tsp sesame oil, 3 garlic cloves (grated), 1 tsp grated ginger, 2 tbsp water
  • 1 Lebanese cucumber, thinly sliced
  • 1 tsp rice vinegar and a pinch of salt, for the cucumber
  • Steamed rice, to serve
  • Toasted sesame seeds and sliced spring onion, to serve
  • Kimchi, to serve (optional)

Instructions

  1. Toss the cucumber with 1 tsp rice vinegar and a pinch of salt and set aside. Whisk the glaze ingredients together.
  2. Heat the oil in a large frying pan over medium-high heat. Cook the chicken for 5-6 minutes on the first side until well browned, then turn and cook for 4 minutes.
  3. Lower the heat to medium and pour in the glaze. Simmer, turning the chicken, for 2-3 minutes until the sauce is thick and sticky and the chicken is cooked through.
  4. Rest for 2 minutes, then slice.
  5. Serve over rice with the cucumber, extra sauce from the pan, sesame seeds, spring onion and kimchi.
