Coca-Cola Chicken Wings (Ke Le Ji Chi)

Coca-Cola chicken wings (可乐鸡翅, ke le ji chi) are one of China's most popular home-cooked dishes, and the first thing many students learn to cook. It sounds strange, but the cola reduces with soy sauce into a sweet, savoury, sticky glaze that tastes like the best teriyaki you've had.

There's no marinating and no oven. Brown the wings, pour in a can of Coke, soy sauce and a few aromatics, and let it bubble until the sauce turns to syrup.

Use full-sugar cola. Diet and zero-sugar versions won't caramelise and can turn bitter when reduced.

Ingredients

  • 1kg chicken wings (wingettes and drumettes)
  • 1 tbsp neutral oil
  • 4 garlic cloves, smashed
  • 4 slices ginger
  • 2 spring onions, cut into 4cm lengths, plus extra sliced to serve
  • 1 tbsp Shaoxing wine
  • 1 can (375ml) full-sugar Coca-Cola
  • 2 1/2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 star anise (optional)
  • Toasted sesame seeds and steamed jasmine rice, to serve

Instructions

  1. Pat the wings very dry with paper towel. Score each one twice on both sides so the sauce can soak in.
  2. Heat the oil in a large frying pan or wok over medium-high heat. Add the wings in a single layer and cook for 3-4 minutes each side until golden.
  3. Add the garlic, ginger and spring onion and stir for 1 minute. Splash in the Shaoxing wine.
  4. Pour in the Coca-Cola, light and dark soy sauce and star anise. Bring to the boil, then reduce to a lively simmer and cook uncovered for 20 minutes, turning the wings now and then.
  5. Turn the heat up for the last 3-5 minutes and keep turning the wings until the sauce is thick, sticky and coats them in a dark glaze. Watch closely at the end so it doesn't burn.
  6. Scatter with sesame seeds and sliced spring onion and serve with rice.
