Yukgaejang (Spicy Beef and Vegetable Soup)

Yukgaejang is big, bold and built to warm you from the inside out. Beef brisket is simmered until tender then shredded by hand, and tossed back into a fiery red broth with bean sprouts, fernbrake and long batons of leek. It's a soup with real texture and substance.

The chilli oil base, made by frying gochugaru in oil with garlic, gives the broth its deep red colour and gentle heat without being overwhelming, while a swirl of beaten egg near the end adds silky ribbons through the soup.

It's a proper cold-and-flu-season fixer, but honestly good enough to make any night of the week feel like something special. Serve with a bowl of rice and a side of kimchi.

Ingredients

  • 400g beef brisket or shin
  • 8 cups water
  • 1 onion, sliced
  • 200g fernbrake (gosari), soaked
  • 200g bean sprouts
  • 2 leeks, cut into batons
  • 3 tbsp gochugaru
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 eggs, beaten
  • 1 tsp sesame oil
  • Salt and pepper, to taste

Instructions

  1. Place the beef in a large pot with the water and onion. Bring to the boil, skimming off any scum, then reduce heat and simmer, covered, for 45 minutes until tender.
  2. Remove the beef and set aside to cool slightly, then shred into bite-sized pieces by hand. Reserve the broth.
  3. Heat the oil in a separate large pot over medium heat, add the gochugaru and garlic, and fry gently for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the shredded beef back in along with the reserved broth.
  5. Add the soaked fernbrake, bean sprouts and leek batons, and bring to a simmer.
  6. Season with soy sauce and fish sauce, and simmer for 15-20 minutes until the vegetables are tender and the flavours have melded.
  7. Drizzle in the beaten egg in a thin stream while stirring gently, then turn off the heat.
  8. Season with salt and pepper to taste, finish with a drizzle of sesame oil, and serve hot with steamed rice.
