Thit Kho Trung (Vietnamese Braised Pork and Eggs)

Thit kho trung is real comfort food – pork belly and whole eggs simmered gently in a caramel and coconut water braise until the meat turns meltingly tender and the eggs soak up all that deep, savoury-sweet flavour. It's a dish you'll find on family tables across Vietnam, especially around Tet, but it's just as welcome on any cold weeknight.

The base of the dish is a homemade caramel sauce, made by cooking sugar until it turns a deep amber before sweetening with coconut water and fish sauce. It sounds fussy but it really isn't – just keep an eye on the pot and have your other ingredients ready to go, since the caramel moves quickly once it starts to colour.

This is very much a better-the-next-day dish, so don't be afraid to make it ahead. Serve simply with steamed jasmine rice and a pile of steamed greens or pickled vegetables to cut through the richness.

Pantry bits

  • Heavy-based saucepan or pot
  • Small pot (for boiling eggs)

Ingredients

  • 800g pork belly, cut into large chunks
  • 8 eggs, hard-boiled and peeled
  • 1/4 cup caster sugar
  • 2 tbsp water (for caramel)
  • 500ml coconut water
  • 1/4 cup fish sauce
  • 3 cloves garlic, minced
  • 2 eschalots, minced
  • 1 tsp black pepper
  • 2 spring onions, sliced, to garnish
  • Steamed jasmine rice, to serve

Instructions

  1. Place the pork belly chunks in a pot of boiling water for 2-3 minutes to blanch, then drain and rinse. This helps remove excess fat and impurities.
  2. In a heavy-based saucepan, combine sugar and water. Cook over medium heat, without stirring, until it turns a deep amber caramel colour.
  3. Carefully add the blanched pork belly to the caramel, stirring to coat (it will bubble and spit, so stand back a little).
  4. Add garlic, eschalots and pepper, and cook for 1-2 minutes until fragrant.
  5. Pour in the coconut water and fish sauce, then bring to a simmer.
  6. Cover and simmer gently for 40-45 minutes, until the pork is tender, stirring occasionally.
  7. Add the peeled hard-boiled eggs to the pot and simmer, uncovered, for a further 15-20 minutes, until the sauce has reduced and turned glossy.
  8. Taste and adjust seasoning with a little extra fish sauce or sugar if needed.
  9. Serve hot over steamed jasmine rice, garnished with sliced spring onion.
