Thai Garlic Pepper Chicken (Gai Tod Kratiem)

Gai tod kratiem is the dish you order at a Thai shophouse when you want something fast, savoury and deeply garlicky. It is chicken and garlic, and not much else, which means both have to be treated properly.

The trick is the sheer volume of garlic, plus a generous hand with white pepper. Fry the garlic gently first so it turns golden and sweet rather than bitter, then bring it back at the end so it keeps its crunch.

Twenty five minutes from start to finish, one pan, and a plate of jasmine rice underneath to soak up the peppery pan juices. Weeknight cooking does not get much better.

Ingredients

  • 500g chicken thigh fillets, sliced 1cm thick
  • 8 cloves garlic, roughly chopped
  • 2 tsp ground white pepper
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tsp caster sugar
  • 2 tbsp coriander roots or stems, finely chopped
  • 3 tbsp vegetable oil
  • 2 tbsp water
  • Coriander leaves, to serve
  • Sliced cucumber, to serve
  • Steamed jasmine rice, to serve

Instructions

  1. Pound or blend the garlic, coriander roots and white pepper into a rough paste. A little texture is good here, so do not take it all the way to a puree.
  2. Toss the chicken with half the paste, the fish sauce, oyster sauce, soy sauce and sugar. Leave to sit for 10 minutes while you cook the rice.
  3. Heat the oil in a wok or large frying pan over medium heat. Add the remaining garlic paste and fry for 1 to 2 minutes until golden and fragrant, then scoop it out and set aside.
  4. Turn the heat to high. Add the chicken in a single layer and leave it undisturbed for 2 minutes so it caramelises, then stir fry for a further 3 to 4 minutes until cooked through.
  5. Splash in the water to lift the sticky bits from the base of the pan and let it bubble down into a glossy sauce.
  6. Return the reserved fried garlic to the pan, toss once and take it straight off the heat.
  7. Spoon over steamed jasmine rice with cucumber slices alongside, and scatter with coriander leaves.
