Slow Cooker Dak Bokkeumtang, Korean Braised Spicy Chicken

Dak bokkeumtang is the big red pot of braised chicken you see on every Korean home table, sweet and savoury with a proper chilli hum from gochujang and gochugaru. The slow cooker version takes all the watching out of it.

Chicken on the bone is what you want, it holds together over the long cook and gives the sauce body. The potato goes soft at the edges and thickens everything into a glossy braise.

Give it a quick reduction at the end so the sauce clings, then serve it over jasmine rice with plenty of spring onion and sesame seeds.

Ingredients

  • 1.2kg chicken drumsticks and thigh cutlets, skin on
  • 3 tbsp gochujang
  • 2 tbsp gochugaru
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp brown sugar
  • 4 garlic cloves, finely chopped
  • 2cm piece ginger, finely grated
  • 250ml chicken stock or water
  • 3 medium potatoes, about 600g, cut into large chunks
  • 1 large carrot, cut into thick chunks
  • 1 brown onion, cut into wedges
  • 2 spring onions, cut into 4cm lengths
  • 1 tbsp toasted sesame oil
  • 1 tsp toasted sesame seeds
  • Steamed jasmine rice, to serve

Instructions

  1. Whisk the gochujang, gochugaru, soy sauce, mirin, brown sugar, garlic, ginger and stock together in a jug until smooth.
  2. If you have five spare minutes, brown the chicken skin side down in a hot dry frying pan for 3 to 4 minutes. It is optional but it gives the finished braise a much better colour and flavour.
  3. Put the potato, carrot and onion in the base of the slow cooker and sit the chicken on top. Pour over the sauce and turn the chicken once to coat.
  4. Cover and cook on low for 5 hours or high for 3 hours, until the chicken is falling off the bone and the potato is tender all the way through.
  5. Lift the chicken and vegetables out with a slotted spoon. If the sauce is thin, tip it into a saucepan and boil hard for 5 minutes until it thickens and turns glossy.
  6. Return everything to the pot, stir through the sesame oil and scatter over the spring onion and sesame seeds.
  7. Serve straight from the pot over steamed jasmine rice, spooning plenty of sauce over the top.
