Spicy Wontons in Chilli Oil (Hong You Chaoshou)

Hong you chaoshou, or 'red oil wontons', is Sichuan street food at its finest. Delicate pork-filled wontons are boiled until they float and turn silky, then bathed in a glossy, deep red chilli oil sauce sharpened with black vinegar, garlic and a whisper of sugar. It's spicy, savoury, a little sour and completely addictive.

What sets this apart from a plain bowl of wontons in broth is that fiery, aromatic sauce — good chilli oil is everything here, so it's worth taking a few extra minutes to make your own using dried chilli flakes and warm spices rather than reaching for a store-bought jar. Once you've got a jar of homemade chilli oil in the fridge, this dish comes together in about 20 minutes.

These make a brilliant starter for a bigger Sichuan feast, or a satisfying light meal on their own with a side of blanched greens.

Ingredients

  • 30 wonton wrappers
  • 300g pork mince
  • 1 tbsp finely chopped ginger
  • 2 spring onions, finely chopped
  • 1 tbsp light soy sauce
  • 1 tsp Shaoxing wine
  • 1 tsp sesame oil
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 1/3 cup chilli oil (with sediment), plus extra to serve
  • 3 cloves garlic, finely chopped or grated
  • 2 tbsp light soy sauce, for sauce
  • 1 tbsp Chinese black vinegar
  • 1 tsp sugar
  • 2 tbsp wonton cooking water, per bowl
  • Chopped spring onion, to garnish
  • Toasted sesame seeds, to garnish

Instructions

  1. Combine the pork mince, ginger, spring onion, light soy sauce, Shaoxing wine, sesame oil, white pepper and salt in a bowl, mixing well until slightly sticky.
  2. Place a teaspoon of filling in the centre of each wonton wrapper. Wet the edges with water, fold into a triangle and press to seal, then bring the two bottom corners together and pinch to seal, forming the classic wonton shape.
  3. For the sauce, divide the garlic, extra light soy sauce, black vinegar, sugar and chilli oil evenly between four serving bowls.
  4. Bring a large pot of water to the boil. Cook the wontons in batches for 3-4 minutes until they float to the surface and the filling is cooked through.
  5. Add 2 tablespoons of the wonton cooking water to each bowl to loosen the sauce slightly.
  6. Use a slotted spoon to transfer the cooked wontons directly into the sauce-filled bowls, dividing evenly.
  7. Toss gently to coat the wontons in the sauce, top with extra chilli oil if you like it hotter, and garnish with spring onion and sesame seeds. Serve immediately.
