Slow Cooker Soy Braised Chicken, See Yau Gai

See yau gai is Cantonese soy sauce chicken, a restaurant classic that takes to a slow cooker beautifully. The braise needs no watching, and the low, steady heat keeps the meat tender rather than stringy.

The master sauce is the whole point. Light and dark soy, Shaoxing, ginger and star anise cook down with a knob of rock sugar that caramelises into a glossy, savoury syrup, and you will want to spoon plenty of it over the rice.

Steamed jasmine rice and something green on the side is all it needs. Save any leftover braising liquid in the freezer, because it only gets better the second time around.

Ingredients

  • 1.4 kg chicken pieces (marylands, thighs and drumsticks), skin on
  • 125 ml light soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 60 ml Shaoxing wine
  • 40 g Chinese rock sugar, or 2 tbsp brown sugar
  • 6 slices fresh ginger
  • 4 garlic cloves, lightly crushed
  • 3 whole star anise
  • 1 cinnamon quill
  • 4 spring onions, cut into 5 cm lengths
  • 250 ml water
  • 2 tsp sesame oil
  • Steamed jasmine rice, to serve

Instructions

  1. Pat the chicken pieces dry with paper towel.
  2. Combine the light soy, dark soy, oyster sauce, Shaoxing wine, rock sugar and water in the slow cooker, stirring until the sugar starts to dissolve.
  3. Add the ginger, garlic, star anise, cinnamon quill and half the spring onions.
  4. Nestle the chicken into the sauce skin side up, turning each piece once to coat. The liquid will not cover the chicken, which is exactly what you want.
  5. Cover and cook on low for 4 hours, or on high for 2 hours, spooning the sauce over the chicken once or twice if you are passing by.
  6. Lift the chicken onto a board and rest for 5 minutes. Skim the fat from the sauce, then simmer the sauce in a small saucepan for 5 minutes if you would like it thicker.
  7. Stir the sesame oil through the sauce. Cut the chicken into pieces, arrange over steamed jasmine rice and spoon the sauce generously over the top.
  8. Scatter with the remaining spring onions and serve.
