Shanghai Fried Noodles (Cu Chao Mian)

Shanghai fried noodles are the dish everyone orders alongside dumplings. Thick, slippery wheat noodles, slivers of pork and soft cabbage, all stained a deep brown with dark soy.

It's a simple, pantry-led sauce: dark soy for colour and a hint of molasses, light soy and oyster sauce for savoury depth, and a little sugar to balance it all.

Look for fresh Shanghai noodles at Asian grocers. Thick udon works well if you can't find them.

  • 2 tbsp neutral oil
  • 3 garlic cloves, finely chopped
  • 1/4 Chinese cabbage (wombok), shredded
  • 4 shiitake mushrooms, sliced
  • 2 baby bok choy, quartered
  • Sauce: 2 tbsp dark soy sauce, 1 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1/4 cup (60ml) water
  • 1 tsp sesame oil
  • White pepper, to taste

Instructions
