Sai Ua (Northern Thai Herb Sausage)

Sai Ua is the sausage you'll smell grilling long before you see it, coiled up over charcoal at markets throughout Northern Thailand. It's made with pork mince worked through with a fistful of fresh herbs, lemongrass, kaffir lime leaf and coriander root, plus a good hit of chilli paste for depth.

Traditionally it's stuffed into natural casings and grilled until the skin is blistered and the inside stays juicy, but you can just as easily shape it into patties if casings aren't your thing. Either way, the flavour is unmistakably Northern Thai.

Slice it up and serve with sticky rice, fresh cabbage and a wedge of lime for a proper Chiang Mai-style feast at home.

Pantry bits

  • Mortar and pestle
  • Large mixing bowl
  • Sausage funnel or piping bag (if using casings)
  • Barbecue or grill pan
  • Skewer or fork
  • Sharp knife and chopping board

Ingredients

  • 600g pork mince (not too lean)
  • 3 stalks lemongrass, finely sliced
  • 4 kaffir lime leaves, very finely shredded
  • 3 coriander roots, cleaned and finely chopped
  • 4 cloves garlic
  • 2 red shallots
  • 3 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 2 long red chillies, finely sliced
  • 1/4 cup coriander leaves and stems, chopped
  • Natural sausage casings (optional)
  • Sticky rice, cabbage wedges and lime, to serve

Instructions

  1. Pound the lemongrass, kaffir lime leaves, coriander root, garlic and shallots together in a mortar and pestle until you have a fine, fragrant paste.
  2. In a large bowl, combine the pork mince with the pounded paste, red curry paste, fish sauce, salt, sliced chillies and chopped coriander.
  3. Mix well with your hands for several minutes until the mixture becomes slightly sticky, this helps bind the sausage together.
  4. If using casings, stuff the mixture into the casings and tie or twist into coils or links. Otherwise, shape the mixture into flat patties or small logs.
  5. Prick the sausages a few times with a skewer or fork to stop them bursting while cooking.
  6. Grill over medium heat on a barbecue or grill pan, turning regularly, for 15-18 minutes until cooked through and nicely charred in places.
  7. Rest for a few minutes, then slice on an angle and serve with sticky rice, fresh cabbage wedges and lime.
