Nasu Dengaku (Miso Glazed Eggplant)

Nasu dengaku is a staple of Japanese izakaya menus: eggplant that's soft and almost custardy inside, topped with a glossy, caramelised miso glaze.

The glaze is a pantry classic called dengaku miso, made from miso, mirin, sake and sugar. It's equally good on tofu, so make a double batch.

Serve as a side with rice and grilled fish or chicken, or as a vegetarian main.

Ingredients

  • 2 medium eggplants
  • 3 tbsp neutral oil
  • 3 tbsp miso (red or white)
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 1/2 tbsp sugar
  • Toasted sesame seeds, to serve
  • 1 spring onion, thinly sliced

Instructions

  1. Halve the eggplants lengthways and score the cut sides in a deep criss-cross pattern, without cutting through the skin.
  2. Stir the miso, mirin, sake and sugar in a small saucepan over low heat for 1-2 minutes until smooth and glossy.
  3. Heat the oil in a large frying pan over medium heat. Cook the eggplant cut side down for 5-6 minutes until golden, then turn, cover with a lid and cook for 6-8 minutes until completely soft.
  4. Heat the grill to high. Place the eggplant cut side up on a tray and spread with the miso glaze.
  5. Grill for 2-3 minutes until bubbling and caramelised. Top with sesame seeds and spring onion.
