Moo Krob (Thai Crispy Pork Belly)

Moo Krob is the pork belly dish that makes people go quiet at the table, all crackling skin and juicy meat underneath. It's a staple at Thai street stalls, chopped up and served over rice, or stir-fried through noodles and vegetables for something heartier.

Getting the skin properly crisp takes a bit of patience, a dry brine, a good simmer, then time in a hot oven or fryer, but none of the steps are difficult, they just need time to work their magic.

Once you've got a batch of crispy pork belly in the fridge, you'll find all sorts of excuses to use it. This version is served simply with steamed rice, a drizzle of soy and a scatter of chilli, letting that crackling do the talking.

Ingredients

  • 1kg pork belly, skin on
  • 2 tablespoons white vinegar
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 4 cloves garlic, chopped
  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 1/2 teaspoon white pepper
  • 1 tablespoon vegetable oil
  • 2 long red chillies, sliced, to serve
  • Steamed jasmine rice, to serve

Instructions

  1. Score the pork skin in a tight crosshatch pattern, being careful not to cut into the meat.
  2. Place the pork in a large pot of water, bring to the boil and simmer for 20 minutes to par-cook. Drain and pat completely dry with paper towel.
  3. Rub the vinegar over the skin, then mix the salt and baking powder together and rub firmly into the scored skin.
  4. Place the pork skin-side up on a rack over a tray and refrigerate, uncovered, for at least 4 hours or overnight to dry out the skin.
  5. Preheat the oven to 220°C (200°C fan-forced). Roast the pork on the rack for 45-60 minutes, until the skin is deeply golden and crackled all over.
  6. Rest for 10 minutes, then chop into bite-sized pieces.
  7. Heat the vegetable oil in a wok, add the garlic and stir-fry briefly until fragrant, then add the oyster sauce, light and dark soy sauce and white pepper, tossing through the chopped pork just to coat and heat through.
  8. Serve immediately over steamed rice, scattered with sliced chilli.
