Miso Butter Mushroom Udon

Miso and butter are one of Japan's best flavour pairings, and they go especially well with mushrooms. Here they melt into a silky sauce that coats thick, chewy udon noodles.

This is the kind of quick noodle dish you'll find in casual Japanese cafes: a bit of soy and mirin for balance, plenty of black pepper, and spring onion and nori on top. It's vegetarian if you skip the bonito flakes.

Frozen udon works best. It cooks in a couple of minutes and has a much better chew than the shelf-stable kind.

Ingredients

  • 2 portions (about 400g) frozen udon noodles
  • 300g mixed mushrooms (shiitake, oyster, swiss brown), sliced or torn
  • 40g butter
  • 1 tbsp neutral oil
  • 2 garlic cloves, finely chopped
  • 1 1/2 tbsp white miso
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1/4 cup (60ml) udon cooking water
  • Freshly ground black pepper
  • 2 spring onions, thinly sliced
  • Shredded nori and shichimi togarashi, to serve

Instructions

  1. Bring a pot of water to the boil for the udon.
  2. Heat the oil and half the butter in a large frying pan over high heat. Add the mushrooms in a single layer and cook for 3-4 minutes without stirring until golden, then toss and cook for another 2 minutes.
  3. Turn the heat to medium, add the garlic and cook for 30 seconds.
  4. Meanwhile, cook the udon in the boiling water for 1-2 minutes, until loosened. Scoop out 1/4 cup of the water, then drain.
  5. Mix the miso, soy sauce, mirin and the udon water until smooth. Add to the pan with the remaining butter.
  6. Add the noodles and toss for 1 minute until the sauce is glossy and coats every noodle. Season well with black pepper.
  7. Serve topped with spring onion, nori and a pinch of shichimi togarashi.
