20-Minute Korean Beef Mince Bowls

These bowls give you all the flavour of Korean beef bulgogi without slicing or marinating anything. Beef mince is browned hard and then glazed with soy sauce, brown sugar, garlic, ginger and sesame oil.

Pile it onto rice with something crunchy and fresh, like cucumber, kimchi or quick-pickled carrot, and add a fried egg if you're hungry. A spoonful of gochujang stirred in gives it a gentle kick.

It's cheap, quick and great for meal prep. The mince keeps well in the fridge for three days.

Ingredients

  • 500g beef mince
  • 1 tbsp neutral oil
  • 4 garlic cloves, finely chopped
  • 2cm piece ginger, finely grated
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp gochujang (optional)
  • 2 tsp sesame oil
  • 4 spring onions, thinly sliced
  • Steamed short-grain rice, to serve
  • 1 Lebanese cucumber, thinly sliced
  • Kimchi, toasted sesame seeds and a pinch of gochugaru, to serve

Instructions

  1. Mix the soy sauce, brown sugar, gochujang (if using) and sesame oil in a small bowl.
  2. Heat the oil in a large frying pan over high heat. Add the beef and press it flat. Cook without stirring for 3 minutes until well browned underneath, then break it up and cook for another 3 minutes.
  3. Add the garlic, ginger and the white part of the spring onions and cook for 1 minute until fragrant.
  4. Pour in the sauce and simmer for 2-3 minutes, stirring, until it reduces and coats the mince.
  5. Spoon over rice and top with the green spring onion, cucumber, kimchi, sesame seeds and gochugaru.
