Kongnamul Guk (Bean Sprout Soup)

Kongnamul guk is proof that a handful of humble ingredients can make something genuinely special. Crunchy soybean sprouts are simmered gently in stock until just tender, keeping their fresh, nutty crunch, in a broth that's clean, savoury and quietly restorative.

It's the soup Koreans reach for the morning after a big night, and honestly it's just as good any other time too, light enough for a starter, or simple enough to be the whole meal alongside a bowl of rice.

One tip that really matters: keep the lid on while the sprouts cook, or take it off entirely, but don't lift it halfway through, as it can give the soup an odd smell. Keep it simple and it rewards you every time.

Pantry bits

  • Medium saucepan with lid
  • Chef's knife and chopping board
  • Ladle

Ingredients

  • 300g soybean sprouts, washed
  • 4 cups water or anchovy stock
  • 2 cloves garlic, minced
  • 1 spring onion, sliced
  • 1 tbsp fish sauce or soy sauce
  • 1 tsp salt
  • 1/2 tsp gochugaru (optional)
  • 1 green chilli, sliced (optional)
  • 1 tsp sesame oil

Instructions

  1. Rinse the soybean sprouts well and trim any straggly tails if you like.
  2. Bring the water or stock to the boil in a saucepan.
  3. Add the bean sprouts, cover with a lid, and boil for 5 minutes without lifting the lid.
  4. Add the garlic, fish sauce or soy sauce, and salt, and simmer for a further 5 minutes with the lid on.
  5. Stir through the gochugaru and sliced chilli, if using, and simmer for 2 more minutes.
  6. Taste and adjust the seasoning as needed.
  7. Ladle into bowls, scatter with spring onion, and finish with a small drizzle of sesame oil.
