Jjamppong (Korean Spicy Seafood Noodle Soup)

Jjamppong is the spicy partner to jjajangmyeon at every Korean-Chinese restaurant. A deep red, smoky broth, chewy noodles and a mix of seafood and vegetables.

The trick is frying gochugaru in oil with garlic and pork before the stock goes in, which gives the broth its colour and smoky depth. Soy sauce and oyster sauce do the rest.

A frozen seafood marinara mix keeps it easy and affordable.

  • 300g frozen seafood mix (prawns, squid, mussels), thawed
  • 100g pork belly or shoulder, thinly sliced
  • 2 tbsp neutral oil
  • 2 tbsp gochugaru (Korean chilli flakes)
  • 4 garlic cloves, finely chopped
  • 1 tsp grated ginger
  • 1 brown onion, sliced
  • 1/4 Chinese cabbage (wombok), roughly chopped
  • 1 carrot, cut into thin batons
  • 1 zucchini, cut into thin batons
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 4 cups (1L) chicken stock
  • 1 tsp sugar
  • Salt and white pepper, to taste
  • 2 spring onions, cut into lengths

Instructions

  1. Heat the oil in a large saucepan or wok over medium heat. Add the pork, garlic and ginger and stir-fry for 2 minutes.
  2. Add the onion, cabbage and carrot and stir-fry over high heat for 2 minutes until starting to char.
  3. Lower the heat, add the gochugaru and stir for 30 seconds until the oil turns red. Don't let it burn.
  4. Add the soy sauce and oyster sauce, then pour in the stock. Bring to the boil and simmer for 5 minutes.
  5. Add the seafood, zucchini and sugar and simmer for 3-4 minutes until the seafood is cooked. Season with salt and white pepper.
  6. Meanwhile, cook the noodles according to the packet and drain. Divide between large bowls, ladle over the soup and top with spring onion.
