15-Minute Garlic Butter Soy Sauce Pasta

Butter and soy sauce is a combination Japanese cooks figured out long ago. Wafu pasta (Japanese-style pasta) uses it all the time, and this garlicky version is the one you'll make at midnight.

It's simple: spaghetti, lots of garlic sizzled in butter, then soy sauce and a little oyster sauce, loosened with starchy pasta water into a glossy sauce. Black pepper and nori finish it off.

Throw in mushrooms, bacon or a soft egg if you've got them, but it's great just as it is.

Ingredients

  • 200g spaghetti
  • 50g butter
  • 5 garlic cloves, thinly sliced
  • 1 1/2 tbsp soy sauce
  • 2 tsp oyster sauce
  • 1/3 cup (80ml) pasta cooking water
  • Freshly ground black pepper
  • 2 spring onions, thinly sliced
  • Shredded nori or furikake, to serve

Instructions

  1. Cook the spaghetti in well-salted boiling water until al dente. Scoop out 1/2 cup of the cooking water before draining.
  2. While the pasta cooks, melt the butter in a large frying pan over medium-low heat. Add the garlic and cook gently for 2-3 minutes until pale golden. Don't let it brown too far.
  3. Add the soy sauce and oyster sauce to the pan with 1/3 cup of the pasta water and swirl to combine.
  4. Add the drained spaghetti and toss over medium heat for 1 minute until the sauce turns glossy and coats the pasta. Add more pasta water if it looks dry.
  5. Season generously with black pepper and serve topped with spring onion and nori or furikake.
