Ebi Mayo (Japanese Mayo Prawns)

Ebi mayo (エビマヨ) is a Japanese-Chinese (chuka) restaurant classic and a favourite in Japanese convenience-store bento and on izakaya menus. Prawns are coated in a light, crisp batter and tossed in a sauce of Kewpie mayonnaise, condensed milk, ketchup and a little lemon.

It's a cousin of the honey walnut prawns you see at Chinese restaurants, but tangier and less sweet. Kewpie mayo is what makes it, so it's worth having a bottle in the fridge.

Toss the prawns in the sauce right at the end so they stay crunchy.

Ingredients

  • 400g raw prawns, peeled and deveined
  • 1/4 tsp salt
  • 1 tbsp sake
  • 1 egg white
  • 1/3 cup (50g) potato starch or cornflour
  • Neutral oil, for shallow frying
  • 1/4 cup (60g) Kewpie mayonnaise
  • 1 tbsp sweetened condensed milk (or 2 tsp honey)
  • 1 tsp tomato ketchup
  • 1 tsp lemon juice
  • Shredded lettuce, sliced spring onion and steamed rice, to serve

Instructions

  1. Pat the prawns dry and toss with the salt and sake. Add the egg white and mix until coated.
  2. Mix the mayonnaise, condensed milk, ketchup and lemon juice in a large bowl.
  3. Add the potato starch to the prawns and toss until each one is evenly coated.
  4. Heat 2cm of oil in a frying pan over medium-high heat. Fry the prawns in batches for 2 minutes, turning once, until crisp and just cooked. Drain on paper towel and rest for 1 minute.
  5. Add the hot prawns to the mayo sauce and toss gently to coat.
  6. Serve on shredded lettuce, scattered with spring onion, with rice on the side.
