Doenjang Jjigae (Soybean Paste Stew)

Doenjang jjigae is the stew that Korean grandmothers have simmering on the stove more days than not. Built on doenjang, a fermented soybean paste with a deep, funky savouriness, it's earthy, comforting and endlessly adaptable to whatever vegetables are in the fridge.

Unlike its fiery cousin kimchi jjigae, doenjang jjigae is more mellow and grounding, though still with a gentle kick from a pinch of gochugaru and fresh chilli. Soft tofu and a scatter of zucchini, potato and radish soak up all that savoury broth beautifully.

Serve it bubbling hot straight from the pot, with a bowl of steamed rice on the side for spooning the broth over. It's the kind of meal that makes a weeknight feel taken care of.

Pantry bits

  • Earthenware pot (ttukbaegi) or medium saucepan
  • Chef's knife and chopping board
  • Small mixing bowl
  • Wooden spoon

Ingredients

  • 3 tbsp doenjang (Korean soybean paste)
  • 1 tsp gochugaru (optional)
  • 200g beef brisket or pork belly, thinly sliced (optional)
  • 1 zucchini, sliced
  • 1 potato, diced
  • 1/2 onion, sliced
  • 1 cup radish, diced
  • 200g soft tofu, cubed
  • 2 cloves garlic, minced
  • 2 green chillies, sliced
  • 1 spring onion, sliced
  • 4 cups anchovy or vegetable stock
  • 1 tbsp soy sauce, to taste (optional)

Instructions

  1. Combine the doenjang and gochugaru in a small bowl with a splash of the stock and mix into a smooth paste.
  2. Heat a splash of oil in a pot over medium heat and briefly sear the beef or pork, if using, until lightly browned.
  3. Add the onion, potato and radish and stir-fry for 2-3 minutes.
  4. Pour in the stock and the doenjang paste mixture, stirring well to combine, and bring to the boil.
  5. Reduce the heat and simmer for 10 minutes until the potato and radish are just tender.
  6. Add the zucchini, tofu, garlic and green chilli, and simmer for a further 5 minutes.
  7. Taste and adjust the seasoning with a little soy sauce if needed.
  8. Scatter with sliced spring onion and serve bubbling hot in the pot, with steamed rice alongside.
