Curry Udon

Curry udon is what Japanese udon shops serve on cold days: thick noodles in a velvety curry broth that clings to every strand. It's thinner than curry rice sauce and built on dashi, so it tastes deeply savoury rather than just spicy.

The shortcut is a block of Japanese curry roux, loosened with dashi, soy sauce and mirin. Everything else is a handful of chicken, an onion and a packet of frozen udon.

Ingredients

  • 2 portions frozen udon noodles
  • 250g chicken thigh fillet, cut into bite-sized pieces
  • 1 tbsp neutral oil
  • 1 brown onion, thinly sliced
  • 3 cups (750ml) dashi stock
  • 2 blocks (about 40g) Japanese curry roux
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp potato starch mixed with 1 tbsp water (optional, for a thicker broth)
  • 2 spring onions, sliced

Instructions

  1. Heat the oil in a saucepan over medium heat. Cook the onion for 3-4 minutes until soft, then add the chicken and cook for 3 minutes until no longer pink.
  2. Pour in the dashi, soy sauce and mirin and bring to a simmer. Cook for 5 minutes.
  3. Turn the heat to low, add the curry roux and stir until it melts completely. Simmer for 3-4 minutes. Stir in the potato starch slurry if you want it thicker.
  4. Meanwhile, cook the udon in boiling water according to the packet, about 1-2 minutes, and drain.
  5. Divide the noodles between bowls, ladle over the curry broth and chicken, and top with spring onion.
