Chinese Soy Sauce Noodles (Hong Kong Soy Sauce Chow Mein)

Soy sauce chow mein (see yau wong chow mein) is a Hong Kong yum cha and breakfast classic. There's no meat and no fuss, just thin egg noodles fried until slightly crisp, bean sprouts, onion and spring onion, all coated in a glossy soy sauce.

The trick is using two soy sauces: light soy for salt and flavour, dark soy for the deep caramel colour. A little oyster sauce and sugar round it out.

Keep the wok hot and the noodles moving, and use long chopsticks or tongs to toss. It's best eaten straight away.

Ingredients

  • 300g thin fresh egg noodles (Hong Kong-style chow mein noodles)
  • 1 1/2 tbsp light soy sauce
  • 1 1/2 tbsp dark soy sauce
  • 1 tsp oyster sauce
  • 2 tsp sugar
  • 2 tbsp water
  • 3 tbsp neutral oil
  • 1/2 brown onion, thinly sliced
  • 2 cups bean sprouts, trimmed
  • 4 spring onions, cut into 4cm lengths
  • 1 tsp sesame oil
  • Toasted sesame seeds, to serve

Instructions

  1. Loosen the noodles. If they're very tightly packed, blanch them in boiling water for 30 seconds, drain well and spread out to dry for a few minutes.
  2. Mix the light and dark soy sauce, oyster sauce, sugar and water in a small bowl.
  3. Heat 2 tbsp oil in a wok over high heat. Add the noodles and let them sit for 1 minute to crisp, then toss and fry for another 1-2 minutes. Push them up the side of the wok.
  4. Add the remaining oil and the onion and stir-fry for 1 minute until just softened.
  5. Pour the sauce over the noodles and toss quickly with tongs or chopsticks until every strand is evenly brown.
  6. Add the bean sprouts and the white part of the spring onions and toss for 1 minute. The sprouts should stay crunchy.
  7. Add the green spring onion and sesame oil, toss once more and serve sprinkled with sesame seeds.
