Chicken Congee with Goji Berries

Congee, or jook, is the Chinese breakfast that quietly became a comfort food for every hour of the day. Jasmine rice simmered far past the point of politeness until the grains collapse into a silky, savoury porridge.

There is almost no technique to it. You add rice to plenty of stock, keep the heat low and stir now and then so nothing catches. The rice does the rest. A slow cooker handles it beautifully overnight if you would rather wake up to it.

The goji berries go in near the end, where they plump and soften and add little flecks of colour and gentle sweetness against the savoury broth. Pile on the spring onion, ginger and fried shallots, because congee is really a vehicle for toppings.

Ingredients

  • 200 g jasmine rice
  • 2 tsp vegetable oil
  • 2 L chicken stock
  • 500 ml water
  • 500 g chicken thigh fillets
  • 5 cm piece ginger, thinly sliced, plus extra shredded to serve
  • 3 garlic cloves, lightly crushed
  • 2 tbsp dried goji berries (qi zi)
  • 1 tbsp light soy sauce
  • 2 tsp sesame oil
  • 1 tsp sea salt, or to taste
  • white pepper, to taste
  • 3 spring onions, thinly sliced
  • fried shallots and coriander leaves, to serve

Instructions

  1. Rinse the jasmine rice in a sieve under cold water until the water runs almost clear, then drain well. Toss the drained rice with the vegetable oil, which helps the grains break down into a creamier congee.
  2. Put the rice, chicken stock and water in a large heavy-based saucepan with the sliced ginger and crushed garlic. Bring to the boil, then reduce the heat to low.
  3. Simmer, uncovered, for 60 to 75 minutes, stirring every 10 minutes or so and scraping the base of the pan, until the grains have collapsed and the congee is thick and silky. Add a little more water if it thickens too fast.
  4. Add the whole chicken thigh fillets and simmer gently for 15 minutes until cooked through. Lift them out, shred with two forks and return the meat to the pan.
  5. Stir through the goji berries, light soy sauce, sesame oil and salt. Simmer for 5 minutes more, until the berries have plumped and softened.
  6. Season generously with white pepper and taste for salt. Congee needs more seasoning than you expect, so keep tasting.
  7. Ladle into deep bowls and top with the shredded ginger, spring onion, fried shallots and coriander.
  8. For the slow cooker, combine the rinsed oiled rice, stock, water, ginger and garlic on low for 6 to 8 hours, add the chicken for the final hour, then shred it and stir through the goji berries and seasonings before serving.
