Bun Thit Nuong (Grilled Pork Vermicelli Bowl)

There's a reason bun thit nuong turns up on nearly every Vietnamese takeaway menu around Australia – it's the perfect balance of smoky, sweet, tangy and fresh, all in one big bowl. Thin slices of pork shoulder soak up a caramel-y marinade before hitting a hot grill, then get piled on top of cool rice vermicelli with a tangle of herbs, pickled carrot and crunchy peanuts.

This is proper share-plate, cook-at-home food. Once you've got your components prepped – noodles boiled, herbs washed, nuoc cham mixed – the actual cooking takes minutes. It's the kind of dinner where everyone builds their own bowl at the table, which makes it a firm favourite for busy family nights or casual dinners with mates.

Don't stress if you don't have every herb listed – a big handful of whatever's fresh in the fridge will do the job beautifully. The magic really is in that nuoc cham dressing, so don't skip it.

  • Small whisk or fork for nuoc cham

Ingredients

  • 500g pork shoulder or scotch fillet, thinly sliced
  • 3 cloves garlic, finely minced
  • 2 eschalots, finely minced
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp oyster sauce
  • 1 tbsp vegetable oil
  • 400g dried rice vermicelli noodles
  • 1 baby cos lettuce, shredded
  • 1 Lebanese cucumber, julienned
  • 1 cup bean sprouts
  • 1 carrot, quick-pickled or julienned
  • Handful each mint, coriander and Thai basil
  • 1/2 cup roasted peanuts, crushed
  • 1/4 cup fried shallots
  • 1/4 cup fish sauce (for nuoc cham)
  • 1/4 cup lime juice
  • 1/4 cup caster sugar
  • 1/2 cup warm water
  • 1 garlic clove and 1 small red chilli, finely chopped (for nuoc cham)

Instructions

  1. In a bowl, combine sliced pork with garlic, eschalots, fish sauce, brown sugar, oyster sauce and vegetable oil. Mix well, cover and marinate in the fridge for at least 20 minutes, or up to overnight.
  2. Make the nuoc cham by whisking together fish sauce, lime juice, sugar, warm water, garlic and chilli until the sugar dissolves. Set aside.
  3. Cook the rice vermicelli according to packet directions, then drain and rinse under cold water until cool. Divide among serving bowls.
  4. Heat a chargrill pan, BBQ or heavy frying pan over high heat with a little oil. Cook the pork in batches for 2-3 minutes each side, until well charred and cooked through.
  5. Top the noodles with shredded lettuce, cucumber, bean sprouts, pickled carrot and fresh herbs.
  6. Arrange the grilled pork over the top and scatter with crushed peanuts and fried shallots.
  7. Spoon over the nuoc cham just before serving, tossing everything together at the table.
