Bun Rieu Cua (Crab and Tomato Noodle Soup)

Bun rieu is a bit of a hidden gem next to its famous cousin pho – a rustic tomato-based broth studded with a light, fluffy crab and egg cake that sits somewhere between a dumpling and an omelette. It's earthy, a little funky from fermented shrimp paste, and deeply comforting once you get a bowl of it in front of you.

Traditionally the crab cake is made from freshwater field crab, but tinned crab meat combined with pork mince and egg gives a really good approximation at home, and is far easier to track down at the local shops. The tomato broth gets its gorgeous colour and flavour from annatto oil and plenty of ripe tomato, simmered until it's rich and slightly sweet-savoury.

Serve it the traditional way – ladled over rice vermicelli with fresh herbs, bean sprouts, a squeeze of lime and a good dollop of chilli paste for those who like it hot. It's a proper weekend cooking project, but every bit worth it.

Ingredients

  • 400g dried rice vermicelli noodles
  • 200g pork mince
  • 200g tinned or fresh crab meat
  • 2 eggs
  • 2 tbsp fish sauce
  • 1 tsp fermented shrimp paste (mam tom), optional
  • 2 tbsp vegetable oil
  • 1 tbsp annatto seeds (or 1 tbsp annatto oil)
  • 1 onion, diced
  • 4 ripe tomatoes, cut into wedges
  • 2 tbsp tomato paste
  • 1.5 litres pork or chicken stock
  • 1 tsp sugar
  • 1 cup bean sprouts
  • Handful perilla leaves or coriander
  • Lime wedges, to serve
  • Chilli paste, to serve

Instructions

  1. If using annatto seeds, heat 1 tablespoon of oil in a small pan with the seeds over low heat for 2-3 minutes until the oil turns deep red-orange. Strain and discard the seeds, keeping the oil.
  2. Combine pork mince, crab meat and eggs in a bowl with a pinch of salt and pepper. Mix well.
  3. Heat remaining oil in a large pot over medium heat and sauté the onion until soft. Add tomato wedges and tomato paste and cook for 5 minutes, until the tomato softens and breaks down.
  4. Pour in the stock and bring to a simmer. Stir in fish sauce, shrimp paste (if using), sugar and the annatto oil.
  5. Carefully spoon the crab and pork mixture into the simmering broth in large dollops, like poaching dumplings. Simmer gently for 8-10 minutes until set and cooked through, without stirring too much.
  6. Meanwhile, cook the rice vermicelli according to packet directions, then drain and divide among serving bowls.
  7. Ladle the hot broth and crab cake pieces over the noodles.
  8. Top with bean sprouts and perilla leaves, and serve with lime wedges and chilli paste on the side.
