Black Pepper Beef Stir Fry

Black pepper beef is the dish you order when you want something bold, fast and deeply satisfying. Thin-sliced beef gets a quick velvet-tenderising marinade, then a screaming-hot wok flash-fries it with onion, capsicum and a generous crack of black pepper until everything is glossy and fragrant.

It's one of those Cantonese-style restaurant staples that's actually much simpler than it tastes — the whole thing comes together in about the time it takes to cook a pot of rice. The trick is having everything prepped and within arm's reach before the wok goes on, because once it's hot, this dish moves fast.

We like ours with a generous amount of freshly cracked black pepper for real warmth rather than just heat, balanced against a savoury oyster sauce base. Spoon it over steamed rice and dinner is sorted.

Ingredients

  • 500g scotch fillet or rump steak, thinly sliced against the grain
  • 1 tsp bicarbonate of soda
  • 2 tbsp soy sauce, divided
  • 1 tbsp cornflour
  • 2 tbsp vegetable oil
  • 1 brown onion, cut into wedges
  • 1 red capsicum, sliced
  • 1 green capsicum, sliced
  • 4 cloves garlic, finely chopped
  • 1 tbsp finely chopped ginger
  • 2 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • 2-3 tsp freshly cracked black pepper
  • 1/4 cup beef stock or water
  • 2 spring onions, cut into batons
  • Steamed rice, to serve

Instructions

  1. Toss the sliced beef with the bicarbonate of soda and a splash of water, and set aside for 15 minutes to tenderise. Rinse briefly under water and pat dry.
  2. Marinate the beef with 1 tbsp soy sauce and the cornflour, mixing well to coat each slice.
  3. Whisk together the oyster sauce, dark soy sauce, remaining soy sauce, sugar, black pepper and stock in a small bowl.
  4. Heat 1 tablespoon of oil in a wok over high heat until smoking. Add the beef in a single layer and sear for 1 minute without stirring, then toss for another minute until just browned. Remove to a plate.
  5. Add the remaining oil to the wok. Stir-fry the onion and capsicum over high heat for 2 minutes until slightly softened but still crunchy.
  6. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
  7. Return the beef to the wok, pour in the sauce mixture, and toss everything together for 1-2 minutes until the sauce thickens and coats the beef and vegetables glossily.
  8. Scatter over the spring onion, toss once more, and serve immediately with steamed rice.
