Thai Cashew Chicken, Gai Pad Med Mamuang

Gai pad med mamuang is the cashew chicken you order at every Thai place, and it is genuinely quick at home. Twenty five minutes, one wok, and nothing in it that you cannot find at the supermarket.

The trick is frying the cashews and dried chillies separately in a little oil first, so they stay crisp and smoky instead of going soft in the sauce. Fold them back through right at the end.

Keep the heat high and have everything prepped beside the stove, because once the chicken hits the pan it moves fast. Serve straight away with plenty of jasmine rice.

Ingredients

  • 600 g chicken thigh fillets, cut into 3 cm pieces
  • 120 g raw cashews
  • 8 dried long red chillies, halved and deseeded
  • 3 tbsp vegetable oil
  • 1 brown onion, cut into wedges
  • 1 red capsicum, cut into 3 cm pieces
  • 4 garlic cloves, finely chopped
  • 4 spring onions, cut into 4 cm lengths
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tbsp fish sauce
  • 2 tsp caster sugar
  • 2 tbsp water
  • Steamed jasmine rice, to serve

Instructions

  1. Heat 1 tbsp of the oil in a wok over medium heat. Fry the cashews for 2 to 3 minutes until golden, then lift out with a slotted spoon. Fry the dried chillies for 20 seconds until fragrant and set them aside with the cashews.
  2. Stir the oyster sauce, light soy sauce, fish sauce, sugar and water together in a small bowl.
  3. Turn the heat to high and add the remaining 2 tbsp of oil. Add the chicken in a single layer and leave it for a minute to caramelise before tossing. Stir fry for 3 to 4 minutes until just cooked, then move to a plate.
  4. Add the onion and capsicum and stir fry for 2 minutes, until the edges soften but the capsicum still has bite.
  5. Add the garlic and stir fry for 20 seconds, until fragrant.
  6. Return the chicken to the wok, pour in the sauce and toss for 1 minute until everything is glossy and coated.
  7. Take the wok off the heat and fold through the cashews, chillies and spring onions. Serve immediately with jasmine rice.
