Pla rad prik is the dish that arrives at the table and stops conversation: a whole fish fried until the skin crackles, then flooded with a dark, sticky sauce of tamarind, palm sugar, garlic and a serious amount of chilli.
Frying a whole fish sounds intimidating and mostly isn't — the fish needs to be very dry, the oil needs to be hot, and you need to leave it alone once it goes in.
