Pad prik king is the curry that isn't a curry. Red curry paste is fried hard in oil until it splits and darkens, then tossed with green beans and pork so the paste coats everything like a glaze rather than pooling in the bowl.
Because there's no coconut milk doing the heavy lifting, the paste has to be good and it has to be fried properly. Give it a full two minutes in the pan and the difference is obvious.
