Pad Pak Ruam Mit (Thai Mixed Vegetable Stir Fry)

Pad pak ruam mit is the dish that arrives in the middle of the table and gets finished first. Whatever vegetables are good that week, stir-fried hard in a garlicky oyster and soy sauce until they are glazed but still audibly crunchy.

The only real technique is order of operations: hard vegetables first, soft ones last, sauce at the very end. Get that right and it works with almost anything in the fridge.

Ingredients

  • 2 tbsp neutral oil
  • 4 garlic cloves, roughly chopped
  • 1 carrot, thinly sliced on an angle
  • 150g broccoli, cut into small florets
  • 100g green beans, cut into 4cm lengths
  • 1 red capsicum, sliced
  • 100g baby corn, halved lengthways
  • 100g sugar snap peas
  • 150g Chinese cabbage, roughly chopped
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tsp fish sauce
  • 1 tsp palm sugar
  • 4 tbsp vegetable stock or water
  • Steamed jasmine rice, to serve

Instructions

  1. Mix the oyster sauce, soy sauce, fish sauce, palm sugar and stock in a small bowl.
  2. Heat the oil in a wok over the highest heat you have. Add the garlic and stir-fry for 20 seconds until it just turns pale gold.
  3. Add the carrot, broccoli and green beans and stir-fry for 2 minutes, keeping everything moving.
  4. Add the capsicum, baby corn and sugar snaps and stir-fry for another 90 seconds.
  5. Add the cabbage and pour in the sauce. Toss hard for 1 minute until the vegetables are coated and the sauce has reduced to a glaze.
  6. Serve straight away with jasmine rice, while everything still has a snap to it.

Notes:

  • Prep everything before the wok goes on. Once it's hot there is no time to chop
  • A crowded wok steams rather than fries — cook in two batches if your pan is small
  • Leave out the fish sauce and swap the oyster sauce for a mushroom version to make it vegan
