Orak-Arik Telur (Indonesian Scrambled Eggs with Vegetables)

Orak-arik is everyday Indonesian home cooking at its simplest. The name roughly means scrambled or tossed about, and it's exactly that: eggs scrambled through a stir-fry of cabbage, carrot, shallots and chilli.

It's cheap, quick and filling, and it turns up in packed lunches, at warung counters and on family tables with rice and a few prawn crackers.

Adaptation note: every family has its own version, with beans, corn or sausage. We've kept to the classic cabbage and carrot with a gentle chilli kick.

Ingredients

  • 2 tbsp neutral oil
  • 3 eschalots, thinly sliced
  • 2 garlic cloves, finely chopped
  • 1 long red chilli or 1-2 bird's eye chillies, sliced
  • 1 carrot, cut into thin matchsticks
  • 3 cups finely shredded cabbage
  • 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 1/2 tsp sugar
  • 4 eggs, lightly beaten
  • 1 spring onion, sliced
  • Steamed jasmine rice, to serve

Instructions

  1. Heat the oil in a wok or large frying pan over medium-high heat. Fry the eschalots, garlic and chilli for 1 minute until fragrant.
  2. Add the carrot and stir-fry for 2 minutes, then add the cabbage and stir-fry for 2-3 minutes until wilted but still with a little crunch.
  3. Season with the salt, white pepper and sugar.
  4. Push the vegetables to one side, pour the eggs into the gap and let them set for 20 seconds, then scramble them into large curds.
  5. Stir the eggs through the vegetables, add the spring onion and cook for 30 seconds more.
  6. Serve straight away with steamed rice and prawn crackers if you like.
