Omurice (Japanese Omelette Rice)

Omurice sits right at the heart of yoshoku – the Japanese take on Western food – and it is pure comfort. Chicken fried rice, seasoned unapologetically with tomato ketchup, bundled up inside an omelette so soft it barely holds together.

Every Japanese family cafe does a version, and half the appeal is the theatre: the omelette is slid over the rice mound and split open at the table so it slumps down over the sides. If that feels like too much pressure, the simpler wrapped version below tastes exactly the same.

It is a brilliant way to use leftover rice, it takes about twenty minutes, and children eat it without negotiation. Do not skip the squiggle of ketchup on top – it is not optional, it is the whole point.

Ingredients

  • 3 cups cooked short-grain rice, preferably day-old
  • 250g chicken thigh, cut into 1cm dice
  • 1/2 brown onion, finely diced
  • 1/2 cup frozen peas and diced carrot
  • 5 tbsp tomato ketchup, plus extra to serve
  • 1 tbsp light soy sauce
  • 6 eggs
  • 3 tbsp milk or cream
  • 40g butter, divided
  • 2 tbsp vegetable oil
  • 1/4 tsp white pepper
  • Salt, to taste
  • Chopped parsley, to garnish

Instructions

  1. Heat the oil and half the butter in a large frying pan over medium-high heat. Cook the onion for 2 minutes until softened.
  2. Add the chicken and cook for 4-5 minutes until golden and cooked through, then stir in the peas and carrot.
  3. Add the rice, breaking up any clumps, and stir-fry for 2 minutes until heated through.
  4. Push the rice to one side, add the ketchup to the empty side and let it fry for 30 seconds (this cooks out the raw sweetness), then toss everything together with the soy sauce and white pepper. Season with salt and set aside, keeping warm.
  5. Whisk 3 eggs with half the milk and a pinch of salt. Melt a knob of the remaining butter in a clean non-stick pan over medium-low heat.
  6. Pour in the egg and stir gently with chopsticks for 20 seconds, then let it set on the base while the top is still glossy and barely runny.
  7. Spoon half the rice along the centre, then fold the sides of the omelette over to enclose it. Invert onto a plate, seam-side down, and neaten the shape with paper towel.
  8. Repeat with the remaining eggs, milk, butter and rice. Finish each with a generous squiggle of ketchup and a scatter of parsley.
