Gà Kho Gừng (Vietnamese Caramelised Ginger Chicken)

Gà kho gừng is a much-loved Vietnamese family dish: chicken braised (kho) in a dark caramel with lots of fresh ginger until the sauce turns sticky and the chicken is glossy and deeply savoury. It's especially popular on cool, rainy days because of the ginger's warmth.

Like all kho dishes it's salty-sweet and made to be eaten with plenty of steamed rice, plus something fresh like cucumber or boiled greens on the side.

Adaptation note: traditionally it's made with bone-in chicken pieces, often marinated first and braised in a clay pot. We use thigh fillets seasoned just before cooking, so it's done in 30 minutes without losing its character.

Ingredients

  • 700g chicken thigh fillets, cut into 3cm pieces
  • 2 1/2 tbsp fish sauce, divided
  • 1/2 tsp ground black pepper, plus extra to serve
  • 2 tbsp sugar
  • 2 tbsp water
  • 1 tbsp neutral oil
  • 3 eschalots, sliced
  • 3 garlic cloves, finely chopped
  • 50g fresh ginger, peeled and cut into thin matchsticks
  • 1/2 cup (125ml) coconut water or water
  • 1 long red chilli, sliced
  • 2 spring onions, sliced
  • Steamed jasmine rice and sliced cucumber, to serve

Instructions

  1. Toss the chicken with 2 tbsp of the fish sauce and the black pepper and set aside while you start the caramel.
  2. Put the sugar and water in a heavy-based pan or clay pot over medium heat. Let it bubble without stirring, swirling the pan occasionally, for 3-4 minutes until it turns a deep amber.
  3. Carefully add the oil, eschalots, garlic and half the ginger and stir for 1 minute until fragrant.
  4. Add the chicken and stir for 3 minutes so it's coated in the caramel and lightly browned.
  5. Pour in the coconut water, bring to a simmer and cook uncovered for 12-15 minutes, stirring now and then, until the chicken is cooked and the sauce has reduced to a sticky glaze. Season with the remaining fish sauce to taste.
  6. Stir in the remaining ginger, chilli and spring onion, crack over more black pepper and serve with rice and cucumber.
