  • 1L chicken stock
  • 3 tsp cornflour
  • 3 tbsp water
  • 3 eggs, lightly beaten
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 2 spring onions, thinly sliced
  • White pepper, to taste
  • Salt, to taste

Instructions

  1. Bring the chicken stock and ginger to a gentle simmer in a saucepan.
  2. Mix cornflour with water to make a slurry, then stir into the simmering stock. Cook for 1–2 minutes until the broth thickens slightly.
  3. Reduce heat to low. While gently stirring the broth in one direction, slowly drizzle in the beaten eggs in a thin stream.
  4. Let the egg set for 10–15 seconds before stirring gently to form ribbons.
  5. Season with salt and white pepper to taste.
  6. Ladle into bowls, drizzle with sesame oil and scatter with spring onion to serve.
