Đậu hũ sốt cà chua (in the north, đậu phụ sốt cà chua) is one of the most common dishes on a Vietnamese family dinner table. Tofu is fried until golden, then simmered in a sauce of fresh tomatoes, garlic and fish sauce until it soaks up the flavour.
It's simple, cheap and comforting, and it's eaten with steamed rice alongside a soup and some greens. It also happens to be one of the easiest Vietnamese dishes to make on a weeknight.
Adaptation note: we add a spoonful of tomato paste to give supermarket tomatoes a deeper colour and flavour. For a vegetarian version, swap the fish sauce for light soy sauce.
