Chicken Lo Mein

Lo mein is the noodle dish everyone orders and nobody thinks to make at home, which is a shame because it comes together in about the time it takes to boil the kettle twice. Soft egg noodles, tender chicken and a glossy savoury sauce that clings to every strand.

The trick is heat and speed. Have everything chopped and sitting beside the wok before you start, because once the chicken hits the pan you have about six minutes of very happy chaos. Toss rather than stir, so the noodles stay long and silky instead of breaking up.

It is forgiving, too. Swap the wombok for whatever is looking lonely in the crisper, add extra bean sprouts for crunch, or double the sauce if you like things saucier. A weeknight favourite with all the flavour of takeaway at a fraction of the cost.

Ingredients

  • 400 g fresh egg noodles (or 250 g dried egg noodles)
  • 500 g chicken thigh fillets, thinly sliced
  • 1 tbsp Shaoxing wine
  • 2 tsp cornflour
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp caster sugar
  • 2 tsp sesame oil
  • 2 tbsp vegetable oil
  • 3 garlic cloves, finely chopped
  • 2 tsp finely grated ginger
  • 1 carrot, cut into thin matchsticks
  • 150 g wombok (Chinese cabbage), finely shredded
  • 80 g bean sprouts
  • 4 spring onions, cut into 4 cm lengths
  • 60 ml chicken stock or water

Instructions

  1. Toss the sliced chicken with the Shaoxing wine and cornflour and set aside for 10 minutes while you prepare everything else.
  2. In a small bowl, stir together the light soy sauce, dark soy sauce, oyster sauce, caster sugar, sesame oil and stock. Set the sauce beside the stove.
  3. Cook the egg noodles in a large saucepan of boiling water until just tender, about 2 minutes for fresh or 4 minutes for dried. Drain well, rinse briefly under cold water and shake dry.
  4. Heat 1 tbsp of the vegetable oil in a wok or large frypan over high heat until it shimmers. Add the chicken in a single layer and cook, undisturbed, for 1 minute, then stir-fry for 2 minutes more until golden and just cooked through. Tip onto a plate.
  5. Add the remaining oil to the wok. Stir-fry the garlic and ginger for 15 seconds until fragrant, then add the carrot and wombok and stir-fry for 2 minutes until the cabbage softens but still has bite.
  6. Return the chicken to the wok with the noodles, bean sprouts and spring onions. Pour over the sauce and toss with tongs for 1 to 2 minutes, lifting the noodles high so everything is evenly coated and glossy.
  7. Taste, add a splash more soy sauce if it needs it, and serve straight from the wok while the noodles are still steaming.
