Cha Ca La Vong (Hanoi Turmeric Fish with Dill)

There is a restaurant in Hanoi so committed to this one dish that the street was renamed after it. Cha ca la vong is chunks of white fish marinated in turmeric and galangal, fried until golden, then finished in a pan with an almost absurd quantity of dill and spring onion.

The dill is not a garnish here – it is a vegetable, and it goes in by the bunch. As it hits the hot pan it collapses into something sweet and grassy that plays beautifully against the earthy turmeric and the funk of the shrimp paste in the dipping sauce.

Serve it the Hanoi way: a nest of cold rice vermicelli in each bowl, a spoonful of the sizzling fish and herbs on top, roasted peanuts, and mam tom or nuoc cham for dipping. Bring the pan to the table still spitting.

Ingredients

  • 800g firm white fish fillets (barramundi, ling or snapper), cut into 4cm pieces
  • 2 tbsp ground turmeric
  • 2 tbsp galangal or ginger, finely grated
  • 3 tbsp natural yoghurt or rice flour slurry
  • 2 tbsp fish sauce
  • 1 tsp caster sugar
  • 2 large bunches dill, cut into 5cm lengths
  • 6 spring onions, cut into 5cm lengths
  • 4 tbsp vegetable oil, plus extra for frying
  • 400g dried rice vermicelli
  • 1/2 cup roasted peanuts, roughly crushed
  • Handful coriander and Vietnamese mint
  • 1 tbsp fermented shrimp paste (mam tom) or 125ml nuoc cham, to serve
  • 2 limes, cut into wedges

Instructions

  1. Combine the fish with the turmeric, galangal, yoghurt, fish sauce and sugar. Cover and marinate in the fridge for at least 2 hours, or overnight.
  2. Cook the rice vermicelli according to the packet, then rinse under cold water, drain well and set aside.
  3. Heat 2 tablespoons of oil in a large frying pan over medium-high heat. Fry the fish in batches for 2-3 minutes each side until golden and just cooked through. Set aside.
  4. Wipe the pan, add the remaining oil and get it hot. Return the fish to the pan.
  5. Pile in the dill and spring onion, all of it, and toss gently for 30-60 seconds until just wilted but still bright green.
  6. Take the pan straight to the table while it is still sizzling.
  7. Serve over bowls of cold vermicelli, topped with peanuts and fresh herbs, with mam tom or nuoc cham and lime wedges alongside.
