Ayam Sambal Matah (Chicken with Balinese Raw Sambal)

Sambal matah means raw sambal, and it's the pride of Balinese cooking. Nothing is cooked or ground: shallots, lemongrass, chilli and lime leaves are sliced as finely as you can manage, scrunched with salt and lime juice, then dressed with hot coconut oil.

In Bali it's spooned over grilled fish, fried chicken and just about everything else. Here we pile it onto crisp, turmeric-seasoned chicken thighs for a bright, punchy dinner that's ready in 25 minutes.

Adaptation note: Balinese cooks often add torch ginger flower (kecombrang), which is very hard to find in Australia, so we've left it out. The chicken is pan-fried rather than chargrilled and seasoned just before cooking, with no marinating.

Ingredients

  • 600g chicken thigh fillets, skin on if you can get them
  • 1/2 tsp ground turmeric
  • 1 tsp salt, divided
  • 1 tbsp neutral oil
  • 8 Asian red shallots (or 4 eschalots), very thinly sliced
  • 3 lemongrass stalks, pale part only, very thinly sliced
  • 4-6 red bird's eye chillies, thinly sliced
  • 4 kaffir lime leaves, central vein removed, very finely shredded
  • 1/2 tsp shrimp paste (terasi), optional
  • 1 tsp sugar
  • 2 tbsp lime juice
  • 3 tbsp coconut oil
  • Steamed jasmine rice, to serve

Instructions

  1. Pat the chicken dry and rub with the turmeric and 1/2 tsp of the salt.
  2. Heat the neutral oil in a large frying pan over medium-high heat. Cook the chicken skin side down for 6 minutes until deep golden, then turn and cook for another 5-6 minutes until cooked through. Rest for 2 minutes.
  3. Meanwhile, if using the shrimp paste, toast it in a small dry pan for 30 seconds each side until fragrant, then crumble it into a bowl.
  4. Add the shallots, lemongrass, chillies, lime leaves, sugar and remaining salt to the bowl. Scrunch everything together with your fingers for 30 seconds to release the oils, then stir in the lime juice.
  5. Heat the coconut oil in a small saucepan until shimmering hot, then pour it over the sambal. It should sizzle. Stir well.
  6. Slice the chicken, pile the sambal matah on top and serve with steamed rice.
