Yu Xiang Rou Si (Fish-Fragrant Pork Slivers)

Fish-fragrant is a Sichuan flavour profile rather than an ingredient list: sour, sweet, salty and hot all at once, built from pickled chilli, vinegar, sugar and garlic. It was originally used for fish, which is where the name comes from, and there is no fish in it at all.

Everything is cut into matchsticks of the same size so it cooks in the same few seconds. Do all the knife work first, mix the sauce in advance, and the actual cooking is under five minutes.

Ingredients

  • 500g pork loin or scotch, cut into fine matchsticks
  • 1 tbsp Shaoxing wine
  • 2 tsp cornflour, plus 1 tsp extra
  • 2 tbsp neutral oil
  • 1 1/2 tbsp doubanjiang (chilli bean paste)
  • 3 garlic cloves, finely chopped
  • 3cm piece ginger, finely chopped
  • 150g wood ear fungus, soaked and shredded
  • 1 carrot, cut into fine matchsticks
  • 150g bamboo shoots, cut into matchsticks
  • 1 tbsp Chinkiang black vinegar
  • 1 tbsp caster sugar
  • 1 tbsp light soy sauce
  • 4 spring onions, finely sliced

Instructions

  1. Toss the pork with the Shaoxing, 2 tsp cornflour and a pinch of salt. Mix the vinegar, sugar, soy and extra teaspoon of cornflour with 3 tbsp water in a second bowl.
  2. Cut everything to the same fine matchstick size before you start. Once the wok is hot there is no time, and the dish is judged on how uniform it looks.
  3. Heat the oil in a wok over high heat and stir fry the pork for 2 minutes until it loses its pinkness. Push it to one side.
  4. Add the doubanjiang to the cleared space and fry for 30 seconds until the oil turns red, then add the garlic and ginger for another 30 seconds.
  5. Add the wood ear, carrot and bamboo shoots and stir fry everything together for 2 minutes.
  6. Pour in the sauce and toss for 1 minute until it thickens and clings. Fold through the spring onion and serve with rice.
