Yasai Itame (Japanese Pork and Vegetable Stir Fry)

Yasai itame is what a Japanese diner cooks when you want vegetables and protein in one pan. Thin pork goes in first for flavour, then a mountain of cabbage, carrot, capsicum and bean sprouts hits the heat and collapses to about half its size.

The trick is heat and speed. The vegetables should stay squeaky and bright, so keep the pan hot, keep everything moving, and get it into bowls the moment the cabbage wilts at the edges.

Ingredients

  • 300g thinly sliced pork belly or pork scotch, cut into bite-sized pieces
  • 2 tbsp neutral oil
  • 3 garlic cloves, sliced
  • 1/4 wombok or green cabbage, roughly chopped
  • 1 carrot, cut into thin batons
  • 1 red capsicum, sliced
  • 200g bean sprouts
  • 1 bunch garlic chives or 4 spring onions, cut into 5cm lengths
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sake
  • 1 tsp sesame oil
  • Ground white pepper, to taste

Instructions

  1. Combine the soy, oyster sauce and sake in a small bowl.
  2. Heat the oil in a wok over the highest heat you have. Add the pork and stir fry for 3 minutes until the edges brown and the fat renders.
  3. Add the garlic, carrot and capsicum and stir fry for 1 minute, then add the cabbage and toss for 2 minutes until it starts to wilt but still has crunch.
  4. Add the bean sprouts and garlic chives, pour the sauce down the side of the wok and toss hard for 1 minute so everything is coated and the liquid mostly steams off.
  5. Finish with the sesame oil and a good grind of white pepper. Serve immediately with rice, before the vegetables soften.
