Yakitori (Japanese Grilled Chicken Skewers)

Yakitori is Japanese barbecue at its simplest and best — juicy skewers of chicken thigh and spring onion, grilled over high heat and glazed with tare, a sticky-sweet soy basting sauce that caramelises into something truly special.

The tare is what sets yakitori apart. Soy, mirin, sake and brown sugar are simmered down until glossy, then brushed on in layers as the skewers cook, building up a lacquered, smoky-sweet coating you'll want on everything.

You don't need a special grill — a barbecue or a chargrill pan on the stove does the job brilliantly. Serve the skewers with steamed rice and a cold drink, and you've got a backyard izakaya going.

Ingredients

  • 1kg chicken thigh fillets, cut into 3cm pieces
  • 6 spring onions, white and pale green parts cut into 3cm lengths
  • 125ml soy sauce
  • 125ml mirin
  • 2 tbsp sake (or dry sherry)
  • 2 tbsp brown sugar
  • 1 garlic clove, bruised
  • 2cm piece ginger, sliced
  • 1 tbsp vegetable oil, for brushing
  • Toasted sesame seeds, to serve
  • Steamed rice, to serve

Instructions

  1. Soak 12 bamboo skewers in cold water for 30 minutes so they don't burn on the grill.
  2. Make the tare: combine the soy sauce, mirin, sake, brown sugar, garlic and ginger in a small saucepan. Simmer over medium-low heat for 10-12 minutes until slightly thickened and glossy. Strain out the garlic and ginger, then pour a few tablespoons into a separate bowl for serving.
  3. Thread the chicken onto the skewers, alternating every couple of pieces with a length of spring onion, and pushing everything together snugly.
  4. Heat a barbecue grill or chargrill pan over medium-high heat and brush lightly with oil.
  5. Grill the skewers for 3-4 minutes each side until the chicken is nicely charred at the edges and nearly cooked through.
  6. Brush the skewers all over with the tare and grill for another 1-2 minutes each side, brushing once or twice more, until sticky, glazed and cooked through.
  7. Pile onto a platter, drizzle with the reserved tare, scatter with sesame seeds and serve with steamed rice.
