Yaki Udon (Japanese Stir-Fried Noodles)

Yaki udon is the Japanese stir-fry that deserves a permanent spot in your weeknight rotation. Thick, chewy udon noodles are tossed through a hot pan with pork, cabbage, mushrooms and a glossy soy-and-oyster-sauce dressing that clings to every strand.

Those fat, bouncy noodles are the star here — they pick up a little colour and smokiness from the pan while staying wonderfully soft and springy. A shower of bonito flakes on top adds that classic Japanese street-food finish.

Best of all, it's a one-pan dinner that's done in well under half an hour, and it's endlessly flexible — swap the pork for chicken, prawns or extra vegies and it works just as well.

Ingredients

  • 800g fresh udon noodles (2 x 400g packets)
  • 400g pork loin steaks or fillet, thinly sliced
  • 2 tbsp vegetable oil
  • 1 brown onion, sliced
  • 1 carrot, halved lengthways and thinly sliced on the diagonal
  • 200g cabbage, roughly chopped
  • 100g shiitake or button mushrooms, sliced
  • 2 spring onions, cut into 4cm lengths
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp mirin
  • 1 tsp caster sugar
  • Bonito flakes, to serve
  • Toasted sesame seeds, to serve

Instructions

  1. Mix the soy sauce, oyster sauce, mirin and sugar in a small bowl and set aside.
  2. Place the udon noodles in a large heatproof bowl, cover with boiling water and gently loosen with chopsticks for 1-2 minutes until the strands separate. Drain well.
  3. Heat 1 tablespoon of oil in a large wok or frying pan over high heat. Stir-fry the pork for 2-3 minutes until just browned, then remove to a plate.
  4. Add the remaining oil to the wok. Stir-fry the onion and carrot for 2 minutes, then add the cabbage and mushrooms and stir-fry for another 2-3 minutes until just tender but still with some crunch.
  5. Return the pork to the wok along with the drained noodles and spring onion.
  6. Pour the sauce over and toss everything together for 1-2 minutes until the noodles are hot and glossy and everything is well coated.
  7. Divide between bowls and top with bonito flakes and a scatter of sesame seeds. Serve straight away.
