Xiao Long Bao (Soup Dumplings)

Xiao long bao are the famous Shanghai soup dumplings — delicate pleated parcels that hold a spoonful of hot, savoury broth alongside a tender pork filling. That first careful bite, sipping the soup before eating the dumpling, is one of the great pleasures of yum cha.

The soup trick is simple once you know it: a jellied stock is folded through the filling, and it melts back into liquid as the dumplings steam. Making the jelly ahead means the rest is just mixing, rolling and pleating.

They take a bit of patience, but it's a genuinely fun weekend project, and homemade xiao long bao straight from the steamer are hard to beat.

Pantry bits

  • Bamboo steamer with lid
  • Wok or saucepan the steamer fits over
  • Rolling pin
  • Shallow dish (for the stock jelly)
  • Mixing bowls
  • Baking paper or cabbage leaves for lining

Ingredients

  • 2 cups (500ml) good-quality chicken stock
  • 3 tsp gelatine powder
  • 2 cups (300g) plain flour
  • 3/4 cup (185ml) just-boiled water
  • 300g pork mince (not too lean)
  • 1 tbsp Shaoxing wine
  • 1 tbsp light soy sauce
  • 2 tsp finely grated ginger, plus extra fine matchsticks to serve
  • 1 spring onion, very finely chopped
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/2 tsp caster sugar
  • 1/4 tsp white pepper
  • Chinese black vinegar (Chinkiang), to serve

Instructions

  1. Warm the chicken stock, sprinkle over the gelatine and stir until dissolved. Pour into a shallow dish and refrigerate for at least 2 hours until firmly set, then chop into small cubes.
  2. Mix the flour and just-boiled water with a wooden spoon until it comes together, then knead for 8 minutes until smooth. Cover and rest for 30 minutes.
  3. Combine the pork mince, Shaoxing wine, soy sauce, grated ginger, spring onion, sesame oil, salt, sugar and white pepper, stirring in one direction until sticky. Gently fold through the jellied stock cubes and refrigerate the filling until needed.
  4. Roll the dough into a log and cut into 24 pieces. Roll each into a thin 8cm round, keeping the edges thinner than the centre.
  5. Place a heaped teaspoon of filling in the centre of each wrapper. Pleat the edges up and around, pinching and twisting at the top to seal.
  6. Line a bamboo steamer with baking paper or cabbage leaves and arrange the dumplings 2cm apart. Steam in batches over rapidly simmering water for 8 minutes.
  7. Serve straight from the steamer with black vinegar and ginger matchsticks. Bite a small hole first and sip the hot soup carefully before eating.
