Vietnamese Chicken Curry (Ca Ri Ga)

Ca ri ga is the curry that shows off the gentler side of Vietnamese cooking. It's fragrant rather than fiery, with lemongrass and mild curry powder simmered in coconut milk until the whole kitchen smells incredible.

Tender chicken thighs, sweet potato and carrot soak up all that golden sauce, which is made for mopping up with a crusty baguette or spooning over steamed rice. It's comfort food, Vietnamese style.

Best of all, it's a one-pot dish that mostly looks after itself on the stove. Brown, simmer, done — perfect for a midweek dinner that tastes like it took far more effort than it did.

Ingredients

  • 1kg chicken thigh fillets, cut into large chunks
  • 2 tbsp Vietnamese curry powder (or mild Madras curry powder)
  • 2 stalks lemongrass, bruised and cut into lengths
  • 1 brown onion, cut into wedges
  • 4 garlic cloves, finely chopped
  • 1 tbsp finely grated ginger
  • 400ml can coconut milk
  • 500ml chicken stock
  • 400g sweet potato, cut into large chunks
  • 2 carrots, thickly sliced
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 bay leaves
  • 2 tbsp vegetable oil
  • Fresh coriander and sliced red chilli, to serve

Instructions

  1. Toss the chicken with 1 tablespoon of the curry powder and a pinch of salt, and set aside for 10 minutes while you prep the vegetables.
  2. Heat the oil in a large heavy-based pot over medium-high heat. Brown the chicken in batches until golden, then remove to a plate.
  3. Add the onion, garlic, ginger and lemongrass to the pot and cook for 2-3 minutes until fragrant. Stir in the remaining curry powder and cook for 30 seconds.
  4. Return the chicken to the pot with the coconut milk, chicken stock, fish sauce, sugar and bay leaves. Bring to a gentle simmer.
  5. Add the sweet potato and carrot, then simmer uncovered for 30-35 minutes, stirring now and then, until the chicken is tender and the vegetables are soft but holding their shape.
  6. Taste and adjust with extra fish sauce or sugar — the sauce should be savoury, fragrant and lightly sweet. Fish out the lemongrass and bay leaves.
  7. Serve hot, scattered with coriander and chilli, with warm baguette or steamed rice on the side.
