Tuna Mayo Onigirazu

An onigirazu is what happens when someone decides shaping onigiri by hand takes too long. A sheet of nori, a layer of rice, a filling, more rice, then the corners folded in like a parcel and the whole thing cut in half.

The cut face is the point — neat stripes of nori, rice and filling. Wrap it tightly in cling film and let it sit for a couple of minutes before cutting and it holds together perfectly.

Ingredients

  • 2 cups cooked short-grain rice, warm
  • 1 x 185g tin tuna in oil, drained
  • 3 tbsp Kewpie mayonnaise
  • 1 tsp soy sauce
  • 1 tsp sriracha
  • 2 large sheets nori
  • 1 tbsp furikake
  • ½ Lebanese cucumber, sliced into thin ribbons
  • 2 large lettuce leaves

Instructions

  1. Flake the tuna into a bowl and mix with the Kewpie, soy sauce and sriracha.
  2. Lay a sheet of nori shiny side down on cling film, with a corner pointing towards you.
  3. Spread half the rice in a square in the middle, about 1cm thick, and sprinkle with furikake.
  4. Layer on a lettuce leaf, half the tuna mix and half the cucumber ribbons, then cover with the remaining rice, pressed flat.
  5. Fold the four corners of the nori into the middle so they overlap, then wrap tightly in the cling film and leave for 2 minutes to settle.
  6. Cut straight through the middle with a sharp wet knife, cling film and all, then peel the film back to serve.

Notes:

  • Warm rice sticks; cold rice will not hold the parcel together
  • Wet the knife between cuts or the rice drags
  • Leave it wrapped if you are taking it out — it survives a few hours in a bag far better than a sandwich
